Keto Crock Pot Pumpkin Pie Steel Cut Oats

Enjoy the flavors of pumpkin pie in a comforting bowl of keto-friendly steel cut oats. This recipe is perfect for a cozy breakfast or a nutritious dessert, and it's made easy with the slow cooker.

Ingredients:

  • 1 cup steel cut oats

  • 3 cups unsweetened almond milk

  • 1 cup canned pumpkin puree

  • 1/4 cup keto-friendly sweetener such as erythritol or monk fruit

  • 1 teaspoon pumpkin pie spice

  • 1/2 teaspoon vanilla extract

  • 1/4 teaspoon salt

  • Optional toppings: chopped pecans, shredded coconut, whipped cream for non-vegan

Instructions:

In a crock pot, combine steel cut oats, almond milk, pumpkin puree, sweetener, pumpkin pie spice, vanilla extract, and salt


Stir well to combine


Cover and cook on low for 6-8 hours or on high for 3-4 hours, stirring occasionally
