Pistachio Crusted Salmon

This recipe for Pistachio Crusted Salmon has a great mix of tastes and textures. The crunchy, nutty pistachios go well with the soft, flaky salmon. This dish is simple but classy, and it's great for both weeknight dinners and special events.

Ingredients:

  • 4 salmon fillets 6 oz each

  • 1 cup shelled pistachios, finely chopped

  • 2 tablespoons Dijon mustard

  • 2 tablespoons honey

  • 2 tablespoons olive oil

  • Salt and pepper to taste

Instructions:

Warm the oven up to 190C 375F


Put the chopped pistachios, Dijon mustard, honey, and olive oil in a small bowl and mix them together until they are well mixed


On both sides, salt and pepper the salmon fillets


Spread the pistachio mixture out on top of each salmon fillet and gently press it down to stick


Spread the salmon fillets out on a baking sheet that has been lined with aluminum foil or parchment paper


The crust should be golden brown and crispy after 12 to 15 minutes in a hot oven


The salmon should be cooked all the way through


If you want, you can top the hot dish with extra chopped pistachios
